Observation:
At time of inspection, the 1 deli staff stated they do not possess a FoodSafe certificate. There must be at least 1 staff member working at all times, in the Deli Dept, that possess a valid certificate. This ensure safe and correct food handling processes are being done.
Corrective Action(s):
Immediately have all deli staff members obtain a valid FoodSafe Level 1 certificate.

Comments

A routine inspection was completed:
- Coolers below 4C; thermometers present; and temps recorded daily.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in cloth bucket had [Cl2] of 200ppm.
- 3-comp sink present for dishwashing.
- Meat & cheese slicers are wiped down throughout the day. At the end of the day, the slicers are dismantled, washed and sanitized.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored 6" off the floor on shelves and racks; and foods stored in groups with meats separate from cheese products.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. Orkin is contracted on a monthly basis to monitor the premises. Snap traps and glueboards found throughout the premises.
- All surfaces are in good working order.
- No reheating, cooking, or preparing of sandwiches are being done. Only slicing of deli meat and cheeses is done.
- Valid food permit and decal posted on the wall for the 2024-2025 fiscal year.

ACTION
Have all deli staff possess the FoodSafe Level 1 certificate. At time of the inspection, there was no person present that possessed a valid certificate.
