Observation (CORRECTED DURING INSPECTION):
Prepared bleach sanitizing solution for back and front of house were too strong. Test strips "bleached out", indicating a concentration of > 400ppm
Corrective action: ensure bleach solutions are 100 - 200ppm. Refill and adjust both solutions.

Front handsink was obstructed: small bucket stored inside.
Corrective action: all handsinks must be accessible at all times. Remove small bucket.

Observation:
- Grease and oil buildup noted between cooling equipment.
- Some grease drip marks visible under vent hood.
- Grease felt on shelf under prep table next to prep cooler.
Corrective actions: ensure the premise is maintained in a sanitary condition. Clean all above mentioned areas.

One insert tray stored on the cleaned shelf appeared caked in food debris.
Corrective action: ensure all food equipment and utensils are maintained in good condition. Insert tray was disarded during inspection.

- Prep cooler (left): 4 deg.C
- Prep cooler (right): 3 deg.C undercounter, 4 deg.C insert level
- Front area prep cooler: 3 deg.C
- Beverage/dressings cooler: 2 deg.C
- Low temperature dishwasher dispensing 50ppm chlorine detected at the plate.
- Good thawing practices observed in prep sink.
- Overall storage of food and organization is satisfactory.
- Temperature logs maintained.
- Sanitizer solutions available (note above violation)
- No signs of pests at time of inspection.
- General sanitation satisfactory (except above noted areas).
- Ice machine kept in sanitary condition.
- All handsinks supplied with warm water, liquid soap and paper towels.
- Next service date for vent hood: July 4, 2021.
