Observation: Fruit flies observed in moderate to significant numbers at and around growler refill and adjacent shelves.
Corrective Action(s): Increase bait traps currently in use. Add soap to cocktail and foam up with small volume of water to increase catches. Replace all traps with fresh cocktail daily until numbers or season dictate. If you have a vacuum use it to quickly reset the numbers.
Bar area otherwise looks pretty well mainitained.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Exhaust vents in both parts of kitchen full of full/grease debris. Not in good condition as one is breaking in half.
Hard surfaces in kitchen, especially in hard to reach areas of marginal cleanliness. Main surfaces look good.
Wall above bar at growler fill observed with some old dead fruit flies.
Corrective Action(s): General clean up in noted areas needed as discussed.

Comments

Did not check the production area.
Bar dishwasher is slow to get to temperature, but did achieve 71 C at plate. Make sure it is primed with hot water before adding glasses.
Kitchen dishwasher noted at 76 C. OK.
Handwash stations ok.
sanitol (Quats) solution in spray bottle did not react to strips. Dumped. Main feed good at 200 ppm. Make sure staff fill spray bottles correctly.

Oven not working at time of inspection. New one planned. Clean area prior to switch over.
