Comments

- Hand washing sinks were unobstructed and properly supplied with hot and cold running water, liquid soap, and paper towels
- High-temperature dishwasher reached above 71C at dish surface during rinse cycle (measured 74C at dish surface with thermometer)
- Sanitizer solution available in spray bottles at 200 ppm chlorine
- Hot-held food items were measured to be at 60C or hotter and covered (inspection was conducted after lunch rush). Good. **Reminder that time-tracking system must be in use for items that are held at below 60C.
- All coolers were measured to be at 4C or colder
- All freezers were measured to be at -18C or colder
- Temperature logs for coolers well maintained
- Food storage practices satisfactory.
- Knives stored on knife rack were clean. Ventilation canopy was observed to be clean.
- Rice scoops held in ice in between uses.
- Dishwashing area and garbage area maintained in sanitary conditions
- General sanitation satisfactory. No signs of pests noted at time of inspection.
