- Coolers are maintained at acceptable temperatures (≤4C):

- Hot Holding Equipment are maintaining hot potentially hazardous foods at acceptable temperatures (≥60C):

- Food delivery and temperature control processes reviewed with manager:
- Rice (white, dill mix), soups, stews, tachin, and meat skewers are prepared at corporate central kitchen and delivered daily to the premises. Rice is delivered hot, soups, stews, tachin, and meat skewers are delivered cold. Rice is immediately placed in preheated steam table and hot holding cabinet. Soups, stews, and meat skewers are immediately placed in cooler. Cold items (soups, stews, tachin) are reheated and placed in steam table for hot holding. Meat skewers are cooked to order.
- Reheating procedures reviewed with manager. No objections.
- Rice is used up by end of day or discarded. Leftover soups, stews, tachin, and meat skewers that were not reheated are labelled and stored in cold holding for use the following day. Leftover reheated items in hot holding units are discarded at the end of day.

**Tachin (crispy saffron rice with assorted meat and vegetable filling) has been added to the menu. Manager states that a corporate Food Safety Plan has been developed. **Submit updated FSP to Fraser Health.**

- 200 ppm chlorine bleach sanitizing solution available for sanitizing food contact surfaces.
- High Temperature Sanitizing Dishwasher: 78.3C at dish surface; Minimum Wash and Rinse temperatures achieved per unit data plate.
- General sanitation of the premises appears satisfactory.
- No pest activity noted. Regular pest control services are provided by a pest control company.
- FOODSAFE Level 1 requirements are in compliance. Manager has valid FOODSAFE Level 1 certificate (expires November 2028)
- Valid Permit to Operate posted.

-->CORRECTION ORDER ISSUED. A Follow-Up Inspection will be conducted.

Note: Location and access of current auxiliary storage room is not idea. Location is ~7-8 minute wall (one way) from the premises, on lower floor, only access is through parking lot and loading bay. It is highly recommended that another storage room location with less barriers to access and in closer proximity to the premises is obtained.
