A routine inspection was completed:
- Freezers -18C or colder; cooler was 1C; and thermometers present.
- All foods stored 6" off the floor on pallets, rack, or platforms; and foods stored in groups with proteins separate from RTE foods.
- No expired foods for sale. FIFO rules being followed.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good. No signs of pests.
- All in order.
ACTION:
1) Remove all non-food items (chairs, racks, tires, etc.) from the walk-in-cooler.
2) Do not block access to the hand washing sink and mop sink. Remove the pallets of food in front of these sinks, and remove the items stacked inside the sinks.
3) Sweep the floors every night and once a week do a wet mop of the floors to remove dirt and stains. |
